Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Take leftover bread dough and work in lard and any desired ingredients like butter, eggs, sugar, or spice.

  2. Add a little more flour, let rise once, then mix down and let rise again.

  3. Turn out on a floured surface, knead for a few minutes, roll out, and cut with a biscuit cutter or mold by hand.

  4. Place in a well-greased baking pan and let rise until light.

  5. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes.

  6. For a nice color, brush the tops with warm water before baking, or glaze with a mixture of milk and sugar or a beaten egg yolk with milk.
