  3. Dredge the lamb with salt and flour.

Roast

  1. Place the lamb in a 350°F (175°C) oven and heat slowly.

  2. Increase the oven temperature to 400°F (200°C).

  3. Add ½ pint of water and 2 teaspoons of salt to the dripping pan.

  4. Baste the meat occasionally with the liquid.

  5. Roast for about 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb
Provides the rich, fatty meat that is the centre of the dish.
Flour
Coats the surface, helping it brown and form a crust.
Water
Forms steam and liquid in the dripping pan that keeps the meat moist while it roasts.

The step that matters

Basting the meat occasionally with the liquid. Spooning pan liquid over the meat keeps the surface moist and helps it brown evenly. Opening the oven often lets heat escape, so basting should be done quickly and not too frequently.

Swap the mint

How well each one fits the dish's main ingredients (lamb, flour, lettuce, peas, sauce):
