Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the custard as it heats and gelatinizes, giving it body.
Eggs
Add richness and help set the custard as the proteins coagulate with heat.
Milk
Forms the liquid base that the starch and eggs thicken.
Powdered sugar
Adds sweetness and dissolves easily into the warm custard.

The step that matters

Stir briskly while the custard comes to a boil. Constant stirring keeps the starch and egg proteins dispersed evenly so they thicken smoothly without lumps or scorching on the bottom of the pan.
