What each ingredient does

Bread crumbs
Form the bulk of the dumpling and soak up moisture to give a soft body.
Suet
Adds fat that keeps the dumplings moist and tender as they cook.
Eggs
Bind the mixture together and help it set firm when cooked.
Moist sugar
Adds sweetness and helps the dumplings brown slightly.
Lemon juice
Adds acidity and a bright citrus flavour that balances the sweetness.
