Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the hot milk to form the body of the batter.
Eggs
Yolks enrich and bind the batter; whipped whites lighten it and help it rise.
Baking soda
Reacts to lift and aerate the fritters as they fry.
Melted butter
Adds richness and fat for tenderness and flavour.
Sweet milk
Hydrates the crumbs and gives the batter a soft, tender structure.

The step that matters

Folding in the beaten egg whites. Stiff whites hold air that lightens the batter. Folding gently keeps that air in; stirring hard deflates it, leaving dense fritters.
