Sweetbreads a LA Touraine

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sweetbreads

  1. Parboil the sweetbreads until tender.

  2. Melt the butter in a skillet.

  3. Sauté the sweetbreads with the onion and carrot until browned.

  4. Transfer the sweetbreads to a baking pan.

  5. Add the sherry and stock to the pan.

  6. Cook in a 350°F (175°C) oven for 30 minutes, basting often.

Prepare the peas

  1. Mash the cooked peas through a sieve.

  2. Reheat the peas, allowing excess water to evaporate.

  3. Season the peas with butter, pepper, and salt.

  4. Shape the seasoned peas into nests on a platter.

  5. Arrange the sweetbreads in the pea nests.

Make the cream sauce

  1. Sauté the mushrooms in butter in the same skillet.

  2. Stir in the flour.

  3. Add the cream and the gravy from the sweetbreads.

  4. Stir until smooth.

What each ingredient does

Sweetbreads
Main protein, which becomes tender through parboiling and then browns and braises in the oven.
Butter
Adds fat for browning the sweetbreads and gives richness to the peas and mushrooms.
Flour
Thickens the mushroom and cream mixture into a smooth sauce.
Thick cream
Adds richness and body to the sauce, giving it a smooth, velvety texture.
Rich stock
Adds savory flavor and liquid to the pan, forming the gravy used in the sauce.
Mushrooms
Contribute earthy flavor and a tender texture to the sauce.

The step that matters

Stir in the flour before adding the cream. Cooking flour briefly in the butter and mushroom juices removes its raw taste and lets it thicken the liquid evenly. Adding cream and gravy afterward and stirring steadily prevents lumps and keeps the sauce smooth.

Swap the peas

How well each one fits the dish's main ingredients (butter, onion, carrot, sherry, pepper, mushroom, flour):

  1. Beansfits better
  2. Chestnutfits better
  3. Sesamefits better
  4. Peasthe original

Fit is the average pairing score against butter, onion, carrot, sherry, pepper, mushroom, flour. Candidates are from the same food group and used in at least 100 recipes.
