Eggs Cocotte

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Butter individual baking dishes and line them with a mixture of fine bread crumbs and cream.

  3. Optionally, sprinkle the dish with finely chopped ham, chicken, or mushrooms mixed with a little cream and season with salt and pepper.

  4. Break an egg into each dish and cook in the oven like shirred eggs.

  5. Once done, cover the top with a little cream, tomato sauce, or béchamel sauce.

  6. Sprinkle with chopped parsley before serving.
