Lemon Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a bowl, mix corn starch with cold water until smooth.

  2. In a saucepan, combine boiling water, egg yolks, sugar, corn starch mixture, lemon rind, and lemon juice.

  3. Cook over medium heat until thickened, stirring constantly.

  4. Bake the pie crust until golden brown.

  5. Pour the custard into the baked crust.

  6. Whip egg whites until soft peaks form, then gradually add sugar until stiff peaks form.

  7. Spread meringue over the custard and brown in a 350°F (175°C) oven.
