Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the rhubarb

  1. Cut the rhubarb stalks where the leaves begin.

  2. Strip off the skin.

  3. Cut the stalks into pieces half an inch long.

Assemble the pie

  1. Line a pie dish with pie crust rolled thicker than a dollar.

  2. Add a layer of rhubarb nearly an inch deep.

  3. Mix the rhubarb with sugar, salt, and a little grated nutmeg.

  4. Sprinkle a little flour over the mixture.

  5. Cover with another layer of pie crust.

  6. Cut a slit in the center.

  7. Trim the edges.

Bake

  1. Bake in a 400°F (200°C) oven until the pie loosens from the dish.

Sprinkled over the fruit, it thickens the juices as the pie bakes.
Rich pie crust
Forms the top and bottom shell that holds the filling while it bakes.
