What each ingredient does

Butter
Creams with the sugar to give the wafers richness and a tender, crisp texture.
Fruit sugar
Sweetens the dough and helps it brown during baking.
Bread flour
Provides the structure that holds the thin wafers together.
Almonds
Add nutty flavour and a crisp, toasted topping.

The step that matters

Draw the pan to the oven door and roll quickly. The wafers are very thin and set and darken quickly once out of the oven. They must be separated and turned while still warm and pliable, or they will crack and become hard to roll.

Swap the almond

How well each one fits the dish's main ingredients (butter, sugar, milk, bread, flour, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Cocoafits less well
  4. Hazelnutfits less well

Fit is the average pairing score against butter, sugar, milk, bread, flour, vanilla. Candidates are from the same food group and used in at least 100 recipes.
