Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, giving the wafers a tender, crisp texture.
Fruit sugar
Sweetens the wafers and promotes browning as they bake.
Bread flour
Provides the structure that holds the thin batter together when baked.
Milk
Adds moisture to the batter and helps it spread evenly.
Almonds
Add nutty flavour and a crunchy texture on the surface.

The step that matters

Rolling the wafers while warm. The wafers must be pliable when they leave the oven. As they cool they stiffen and become brittle, so they crack if not rolled quickly after baking.

Swap the almond

How well each one fits the dish's main ingredients (butter, sugar, milk, bread, flour, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Cocoafits less well
  4. Hazelnutfits less well

Fit is the average pairing score against butter, sugar, milk, bread, flour, vanilla. Candidates are from the same food group and used in at least 100 recipes.
