Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, helping the wafers stay tender and crisp.
Fruit sugar
Adds sweetness and helps the wafers brown during baking.
Bread flour
Provides the structure that holds the thin batter together as it bakes.
Milk
Adds moisture and liquid so the batter spreads into a thin, even layer.
Almonds
Add nutty flavor and a crunchy texture on the surface of the wafers.

The step that matters

Rolling the squares while still warm. The wafers become brittle as they cool and cannot be shaped once set. Returning the pan to the oven door keeps them soft enough to roll quickly.

Swap the almond

How well each one fits the dish's main ingredients (butter, sugar, milk, bread, flour, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Cocoafits less well
  4. Hazelnutfits less well

Fit is the average pairing score against butter, sugar, milk, bread, flour, vanilla. Candidates are from the same food group and used in at least 100 recipes.
