What each ingredient does

Grated potato
Adds moisture and body, keeping the pudding tender and dense.
Bread crumbs
Provide bulk and absorb liquid, giving the pudding its structure.
Suet
Adds fat that enriches the texture and keeps the pudding moist during steaming.
Baking soda
Reacts with the sour milk to produce gas, helping the pudding rise.
Sour milk
Its acidity activates the baking soda and adds a slight tang.
Flour
Gives the pudding structure as it sets during steaming.

The step that matters

Steaming time for the molds. Steam is gentle, so the pudding cooks slowly and evenly. Larger molds need about twice the time of individual ones, and undercooking leaves the center wet and heavy while overcooking can dry the crumb.

Swap the currant

How well each one fits the dish's main ingredients (carrot, potato, bread, raisin, sugar, milk, flour):

  1. Figfits better
  2. Vanillafits better
  3. Cherryfits better

Fit is the average pairing score against carrot, potato, bread, raisin, sugar, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
