Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the cake
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the butter and sugar.
Add the egg yolks and whole egg, mixing well.
In a separate bowl, combine the flour, baking soda, cinnamon, cloves, allspice, and nutmeg.
Gradually add the dry ingredients to the creamed mixture, alternating with the sour milk.
Pour the batter into prepared cake pans and bake until a toothpick comes out clean.
Make and finish the icing
For the icing, boil 4 cups of sugar with 2 cups of boiling water until it becomes very syrupy.
Beat the 4 egg whites until stiff peaks form, then slowly pour the hot syrup over them while beating continuously.
Flavor the icing with lemon, let it cool slightly, then spread it over the cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Creams with sugar to trap air and give the cake a tender, rich crumb.
- Egg yolks
- Add richness, moisture and structure to the batter.
- Flour
- Forms the structure that holds the cake together as it bakes.
- Sour milk
- Its acidity reacts with baking soda to lift the batter and tenderize the crumb.
- Baking soda
- Reacts with the acidic sour milk to produce gas that makes the cake rise.
- Sugar
- Sweetens the cake and helps create a soft, moist texture when creamed with butter.
The step that matters
Pouring the hot syrup into the egg whites. Pouring the syrup slowly while beating continuously cooks the whites into a stable, glossy meringue. Pouring too fast or stopping the beating can leave the whites runny or deflated.
Swap the clove
How well each one fits the dish's main ingredients (sugar, butter, flour, milk, egg, cinnamon, allspice):
- Nutmegfits better
- Cardamomfits about as well
- Clovethe original
- Gingerfits less well
Fit is the average pairing score against sugar, butter, flour, milk, egg, cinnamon, allspice. Candidates are from the same food group and used in at least 100 recipes.
