Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding and soak up moisture and flavour.
Egg yolks
Enrich the pudding and help bind it as it cooks.
Egg whites
Whipped to stiff peaks, they lighten the batter and give it a airy, tender texture.
Lemons
Rind and juice add aroma and sharp acidity that balances the sweetness.
Sugar
Adds sweetness and helps balance the tartness of the lemon.

The step that matters

Folding in the egg whites. Whites whipped to stiff peaks trap air that gives lightness. Folding gently keeps that air in; stirring hard deflates the foam and leaves a dense pudding.

Swap the lemon
