Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the soup and give it a smooth, rich body when gently heated.
Butter
Adds richness and fat that carries flavour through the soup.
Lettuce
Softens into the broth while contributing body and a mild, sweet vegetable flavour.
Soup stock
Forms the main liquid base and carries the flavour of the soup.

The step that matters

Stir the egg mixture over low heat. Egg yolks thicken through gentle heat, but high heat scrambles them into curds. Keep the heat low and stir constantly, and add the egg mixture just before serving.

Swap the onion

How well each one fits the dish's main ingredients (peas, lettuce, parsley, butter, egg, pepper):

  1. Shallotfits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against peas, lettuce, parsley, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
