Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main meat, which becomes tender through long, slow stewing.
Salt pork
Renders fat into the pot, adding savory richness to the stew.
Brown flour
Thickens the cooking liquid into a thicker, smoother sauce.
Onion
Adds sweetness and aroma as it softens into the stew.

The step that matters

Adding the flour mixture. Flour mixed with water before adding prevents lumps, because dry flour clumps when it hits hot liquid. Bringing the stew to a boil after adding it lets the starch swell and thicken the sauce.

Swap the peas

How well each one fits the dish's main ingredients (pork, pepper, sage, onion, flour):

  1. Chestnutfits better
  2. Beansfits better
  3. Black-eyed peafits better
  4. Peasthe original

Fit is the average pairing score against pork, pepper, sage, onion, flour. Candidates are from the same food group and used in at least 100 recipes.
