Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken and enrich the custard, adding richness and a smooth texture.
Corn starch
Thickens the milk into a smooth, sliceable custard as it heats.
Egg whites
Whipped with sugar to form a stiff foam that browns into a light topping.
Milk
Forms the liquid base that the starch thickens into the custard.
Sugar
Sweetens the custard and helps stabilize the whipped egg white topping.

The step that matters

Stir the corn starch mixture into the milk just before it boils. Cornstarch thickens only when heated to a boil and must be stirred constantly, otherwise it clumps and the custard stays thin or lumpy.
