What each ingredient does

Grapes
Provide the fruit base and most of the bulk that cooks down into the butter.
Sugar
Adds sweetness and, as it concentrates during cooking, helps the butter thicken and keep.
Vinegar
Adds acidity that brightens the fruit flavour and balances the sugar.

The step that matters

Cook over medium heat, stirring frequently. As water evaporates, the sugar and fruit concentrate and the mixture can scorch on the bottom of the pot. Frequent stirring spreads the heat evenly and keeps the butter from sticking and burning before it reaches the thickened stage.

Swap the grape

How well each one fits the dish's main ingredients (sugar, vinegar, clove, nutmeg):

  1. Figfits better

  3. Quincefits better
  4. Grapethe original

Fit is the average pairing score against sugar, vinegar, clove, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
