Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the liquid into a smooth sauce as it heats and gelatinizes.
Sugar
Adds sweetness and helps give the sauce its body.
Lemon juice and rind
Adds acidity and bright citrus aroma.
Butter
Adds fat and a rich, smooth mouthfeel.

The step that matters

Adding the corn starch mixture to the boiling water. Corn starch must be wetted in cold water first so it disperses without clumping. Stirring it into hot liquid while cooking keeps it smooth as the starch swells and thickens the sauce.
