Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Line a pudding dish with short pastry.

  2. Grate the yellow rind from the lemon and mix it with the bread crumbs.

Make the filling

  1. Add the lemon juice, sugar, and egg yolks; mix well.

  2. Stir in the cream.

  3. Whip the egg whites to stiff peaks and gently fold them into the mixture.

Bake

  1. Fill the pastry with the mixture and bake in a moderate oven (350°F/175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and help set the filling as it bakes.
Egg whites
Whipped and folded in, they add lightness and airy texture to the filling.
Lemon juice
Provides the sharp acidity that gives the tart its characteristic flavor.
Sugar
Sweetens the filling and balances the lemon's acidity.
Cream
Adds moisture and richness, giving the filling a smooth, soft texture.
Bread crumbs
Absorb liquid and give the filling body and a tender structure.

The step that matters

Folding in the egg whites. Whipped whites hold air, and overmixing or stirring vigorously deflates them, losing the light texture. Fold gently so the mixture stays airy.
