What each ingredient does

Cornmeal
Thickens the milk into a pudding and gives the dish its body and grainy texture.
Molasses
Adds sweetness, dark color and a deep caramel-like flavor.
Scalded milk
Forms the liquid base that the cornmeal cooks and thickens in.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Stir in the cold milk just before baking. Cold milk added at the last moment keeps the batter from thickening too early in the bowl, so the cornmeal sets evenly as it bakes.

Swap the ginger

How well each one fits the dish's main ingredients (milk, molasses, cinnamon, butter):

  1. Nutmegfits better
  2. Clovefits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against milk, molasses, cinnamon, butter. Candidates are from the same food group and used in at least 100 recipes.
