Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the body of the pudding, soaking up the milk and custard to hold its shape.
Eggs
Set with heat to bind the pudding into a firm, sliceable texture.
Milk
Soaks the bread and, with the eggs, forms the custard that fills the pudding.
Raisins
Provide chewy pockets of sweetness distributed through the pudding.
Molasses
Adds deep sweetness and a dark color to the custard.

The step that matters

Boil for five to six hours in a kettle of water. The pudding must cook gently and steadily for the full time so the eggs set throughout. Letting the water drop too low or boil away can leave the center wet or underdone.

Swap the raisin

How well each one fits the dish's main ingredients (bread, clove, nutmeg, egg, milk, cinnamon, molasses):

  1. Vanillafits about as well
  2. Figfits about as well
  3. Raisinthe original
  4. Applefits less well

Fit is the average pairing score against bread, clove, nutmeg, egg, milk, cinnamon, molasses. Candidates are from the same food group and used in at least 100 recipes.
