Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly gel as it cools.
Sugar
Adds sweetness and helps balance the sharpness of the lemon juice.
Lemon juice
Adds sharp acidity and bright lemon flavour.
Grated lemon peel
Adds aromatic lemon oils for stronger citrus flavour.

The step that matters

Strain without shaking or squeezing. Pressing or shaking the flannel forces cloudy solids through, making the jelly murky. Letting it drip slowly keeps the gel clear and bright.
