Baked Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pare the dark crust from stale bread until only white bread remains.

  2. Cut the bread into thin slices, then dice it.

  3. Place the diced bread in a pan, strewing the minced suet over the bottom.

Make and bake

  1. Mix the milk, sugar, eggs, and nutmeg together, then pour it over the bread.

  2. Bake in a 350°F (175°C) oven until set in the middle, without stirring.

Serve

  1. Serve from the pan and pour sauce over it in a saucer.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the custard and help it set firm in the oven.
Bread
Forms the body of the pudding and soaks up the liquid custard.
Milk
Provides the liquid that soaks the bread and forms the custard with the eggs.
Suet
Adds richness and fat that softens the bread texture as it melts.
Sugar
Adds sweetness and helps the top brown lightly during baking.

The step that matters

Baking without stirring. Stirring breaks up the bread and disturbs the custard as it sets, so the pudding can turn grainy or uneven. Leave it undisturbed until the middle is set.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, milk, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against bread, milk, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
