What each ingredient does

Eggs
Bind the batter and set the pudding into a firm, sliceable structure as they cook.
Flour
Provides starch that thickens the batter and gives the pudding body as it cooks.
Bread crumbs
Absorb the milk and eggs, giving the pudding a soft, light and moist crumb.
Butter
Adds richness and fat, contributing tenderness and flavor to the pudding.
Sugar
Sweetens the batter and helps give the pudding its flavor and browning potential.
Raisins
Add sweetness, chewy texture and concentrated fruit flavor throughout the pudding.

The step that matters

Tie the cloth tightly over the mold. A loose cloth lets water seep into the pudding during the long boil, making it soggy and diluted. A snug seal keeps water out and the batter moist and cohesive as it steams.

Swap the mace

How well each one fits the dish's main ingredients (milk, lemon, egg, sugar, nutmeg, flour, butter):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against milk, lemon, egg, sugar, nutmeg, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
