Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green peas
Form the main body of the purée, giving its flavor and smooth texture when mashed.
Lettuce
Adds moisture and a mild, sweet vegetable flavor as it softens with the peas.
Butter or olive oil
Adds fat, giving the purée a richer mouthfeel and carrying flavor.
White thickening
Thickens the liquid so the purée holds a smooth, spoonable body.
Eggs
Served alongside as the main protein, setting firm when poached or fried.

The step that matters

Cook the peas gently until soft. Gentle heat softens the peas evenly without boiling them hard, which would dull their bright green color and make the purée grainy or watery. Thickening added afterward needs a smooth base to set properly.

Swap the lettuce

How well each one fits the dish's main ingredients (peas, butter, sugar, egg):

  1. Asparagusfits better
  2. Leekfits better
  3. Sweet potatofits better
