Roast Leg of Lamb

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast

  1. Preheat your oven to 400°F (200°C).

  2. Place the leg of lamb at a distance from the fire to cook evenly.

  3. Baste the lamb continuously while it cooks.

  4. When nearly done, move the lamb closer to the fire for a nice brown color.

  5. Sprinkle coarse sea salt over the meat.

Finish and serve

  1. Empty the dripping pan, then pour boiling water into the pan.

  2. Strain the water over the lamb.

  3. Serve with mint sauce and a fresh salad, along with peas, spinach, or cauliflowers as sides.

What each ingredient does

Leg of lamb
Forms the main dish; its fat and juices help keep the meat moist as it roasts.

The step that matters

Moving the lamb closer to the fire for browning. Browning happens at high surface heat through the Maillard reaction, which builds color and flavor. Leaving it too long can dry or scorch the outside, so watch it closely near the end.

Swap the peas

The recipe marks peas as optional. How well each one fits the dish's main ingredients (lamb, mint, sauce, spinach, cauliflower):

  1. Lentilsfits about as well
  2. Beansfits about as well
  3. Peasthe original
  4. Chickpeafits less well

Fit is the average pairing score against lamb, mint, sauce, spinach, cauliflower. Candidates are from the same food group and used in at least 100 recipes.
