Almond Buns

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a bowl, combine soft yeast, baking soda, and salt.

  2. Add warmed milk, butter, sugar, eggs, and lemon extract. Mix well.

  3. Gradually add flour until the mixture is stiff.

  4. Let the dough rise until doubled in size.

Shape and bake

  1. Roll out the dough to 1 inch thick.

  2. Cut with a small cutter.

  3. Place the cut dough in pans.

  4. Brush the tops with lightly beaten egg white.

  5. Sprinkle with chopped almonds and broken loaf sugar.

  6. Let rise again.

  7. Bake for 1 hour in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dough and add richness and structure as they set in the oven.
Butter
Adds fat for tenderness and a richer crumb.
Soft yeast
Leavens the dough so it rises before baking.
Sugar
Sweetens the buns and helps the tops brown in the oven.
Milk
Provides moisture and liquid that hydrates the flour to form dough.

The step that matters

Letting the dough rise until doubled. Yeast needs enough time to produce gas that expands the dough. Underproofed dough bakes dense, while the second rise after shaping helps the buns keep an open, light texture.
