Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Cream the butter and brown sugar together until light and fluffy.

  2. Add the flour, citron, sour milk, baking soda, raisins, molasses, cloves, allspice, cinnamon, brandy, and baking powder. Mix until well combined.

  3. Pour the batter into a greased cake pan.

Bake

  1. Bake for about 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Adds fat and richness, giving the cake a tender crumb.
Flour
Provides the structure that holds the cake together as it bakes.
Sour milk
Adds moisture and acidity that reacts with the baking soda to help the cake rise.
Molasses
Adds moisture, dark color and deep sweetness to the cake.
Baking soda
Reacts with the acidic sour milk and molasses to produce gas that lifts the batter.
Baking powder
Provides additional lift as the cake heats in the oven.
