Cream Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, stir together the cream, sugar, egg yolks, and grated nutmeg.

  3. Gently fold in the beaten egg whites.

Assemble and bake

  1. Grease a pie plate and sprinkle with stale bread crumbs to form a crust.

  2. Pour the cream mixture into the pie plate.

  3. Sprinkle a layer of bread crumbs on top.

  4. Bake for about 30-40 minutes until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and moisture, giving the pudding a soft, smooth body.
Egg yolks
Set during baking to give the pudding its custard-like structure.
Egg whites
Beaten and folded in, they add lightness and help the pudding rise and hold air.
Sugar
Adds sweetness and helps soften the texture of the set custard.
Stale bread crumbs
Form a crust at the base and top, adding texture and absorbing some of the custard.

The step that matters

Gently fold in the beaten egg whites. Overmixing knocks air out of the whites, so the pudding loses lightness and rises less. Folding keeps the foam intact for a lighter set.
