What each ingredient does

Egg yolks
Thicken the milk into a custard that sets softly and gives the trifle its rich body.
Egg whites
Whipped with sugar into stiff peaks, they form a light, airy topping.
Naples biscuit
Forms the sponge shell that holds the custard and jelly layers.
Boiling milk
Cooks with the yolks to create the custard base and adds creaminess.

The step that matters

Beating the egg whites to stiff peaks. Egg whites need to be beaten until they hold stiff peaks so the topping stays light and does not collapse or weep into the jelly. Any trace of fat or yolk in the bowl can stop them from whipping properly.
