Directions

Cook the rice

  1. Boil the rice in plenty of water for 10 minutes, then drain.

What each ingredient does

Rice
Cooked soft and blended into the dish, giving the cream its body and bulk.
Milk
Supplies the liquid base and dairy richness as it cooks slowly with the rice.
Gelatine
Sets the chilled mixture so it holds its shape when refrigerated until firm.
Whipped cream
Adds fat and airy lightness, folded in to keep the mixture soft and fluffy.
Sugar
Adds sweetness and balances the mild, plain flavour of the rice and milk.

The step that matters

Folding in the whipped cream. Whipped cream is a foam held up by trapped air. Stirring vigorously deflates it and makes the dessert dense, so fold gently, and only once the base is cold enough to hold the air but not yet set.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, sugar, lemon, cream):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Orangethe original
  4. Figfits about as well

Fit is the average pairing score against rice, milk, sugar, lemon, cream. Candidates are from the same food group and used in at least 100 recipes.
