Lemon Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Grate the rind of the lemon and mix it with the bread crumbs.

  2. Squeeze the juice from the lemon and set it aside for the meringue.

  3. Beat the egg yolks until light, then add the bread crumbs, lemon rind, and the grated inside of the lemon.

  4. Mix well and add part of the sugar.

Bake and finish

  1. Bake in a moderate oven at 350°F (175°C) for 45 minutes.

  2. For the frosting, beat the egg whites and mix with the remaining sugar and lemon juice.

  3. Spread the frosting on top and brown in the oven.

  4. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the pudding and whites form the meringue topping that sets and browns.
Bread crumbs
Absorb the milk and give the pudding body and a soft, tender crumb.
Sugar
Sweetens the pudding and helps the meringue stay glossy and stable.
Lemon
Rind adds aroma and juice adds acidity that balances the sweetness.

The step that matters

Browning the meringue topping. Egg whites beaten with sugar can weep or collapse if underbaked or overbaked. Watching the topping closely lets it turn golden while the custard beneath stays set and tender.
