Souffle of Rice

Ingredients

Directions

Make the rice base

  1. In a saucepan, combine the rice, lemon peel, sugar, and butter.

  2. Add enough milk to cover the rice and simmer gently until cooked, adding more milk as needed.

  3. Remove the lemon peel and stir in the ratafia, orange flower water, egg yolks, and thick cream until well mixed.

Finish and bake

  1. In a separate bowl, beat the egg whites until stiff peaks form.

  2. Fold the beaten egg whites into the rice mixture and bake as you would other soufflés.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten to stiff peaks, they trap air and make the soufflé rise and turn light.
Egg yolks
Add richness and help set the base as it bakes.
Thick cream
Adds fat and richness, giving a softer, moister texture.
Blanched rice
Cooked in milk until tender, it forms the thick body of the soufflé base.
Loaf sugar
Adds sweetness and helps balance the flavour of the dairy and eggs.

The step that matters

Folding the beaten egg whites into the rice mixture. Folding gently keeps the air in the whites. Stirring or deflating them makes the soufflé rise less and turn dense.

Swap the orange

How well each one fits the dish's main ingredients (rice, lemon, sugar, butter, milk, egg, cream):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well

Fit is the average pairing score against rice, lemon, sugar, butter, milk, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
