What each ingredient does

Green beans
Provide the crisp, tender-firm texture that holds up in the pickle.
White wine vinegar
Supplies the acidity that preserves the beans and gives the pickle its sharp flavour.
Mace
Adds a warm, aromatic flavour that infuses the hot pickling liquid.
Black pepper
Adds a mild, pungent spice note that complements the vinegar.
Ginger
Contributes a warm, aromatic bite to the pickling liquid.

The step that matters

Blanch the beans until bright green, then drain well. Brief blanching in boiling water sets the green colour and softens the raw bean slightly so it absorbs pickle. Overcooking turns beans dull and mushy, while under-draining dilutes the hot pickle as it is poured in.

Swap the mace

How well each one fits the dish's main ingredients (green beans, white wine, vinegar, pepper, ginger):

  1. Clovefits better
  2. Garlicfits better
  3. Turmericfits better
  4. Macethe original
