Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and moisture, giving the pudding a soft, tender body when set.
Egg yolks
Thicken the custard as they set, giving structure and a smooth texture.
Egg whites
Beaten and folded in, they add lightness and help the pudding rise and hold air.
Sugar
Adds sweetness and contributes to browning on the surface during baking.
Stale bread crumbs
Form a crust on the base and top, adding texture and absorbing some moisture.

The step that matters

Gently fold in the beaten egg whites. Egg whites hold air when beaten, and overmixing or deflating them removes that air, leading to a denser, less light pudding. Folding keeps the foam intact.

Swap the coconut

How well each one fits the dish's main ingredients (cream, sugar, egg, bread, butter):

  1. Vanillafits better
  2. Figfits about as well
  3. Raspberryfits about as well
  4. Coconutthe original

Fit is the average pairing score against cream, sugar, egg, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
