Apple and Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the rice

  1. Combine rice, milk, sugar, lemon peel, and cinnamon in a pot and cook until the rice is soft.

  2. Fill a large high mold with the rice mixture.

Bake and serve

  1. Place the mold in a saucepan of water and bake in a 350°F (175°C) oven for 30 minutes.

  2. Turn the rice out onto a dish and fill the center with apple sauce.

  3. Beat the egg whites until frothy and spread over the apple sauce to create a top layer.

  4. Dust with powdered sugar and lightly brown the top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooked in milk to form the soft, creamy body of the pudding.
Milk
Cooks with the rice to create a soft, custard-like texture.
Egg whites
Beaten to a foam and baked, setting into a light, airy top layer.
Apple sauce
Provides moisture and fruity sweetness in the center of the pudding.
Sugar
Adds sweetness and helps the top layer brown.

The step that matters

Beating the egg whites until frothy. Egg whites must be beaten to a stable foam to hold their shape and set into a light top layer. Under-beaten whites stay runny and collapse, while the browning step depends on that foam baking properly.
