Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the base
Preheat the oven to 350°F (175°C).
In a bowl, combine bread crumbs, sweet milk, brown sugar, beaten egg yolks, grated lemon rind, and butter.
Bake until the mixture is stiff.
Top and finish
In another bowl, beat the egg whites to a froth and mix in powdered sugar and lemon juice.
Pour the egg white mixture over the baked bread mixture.
Return to the oven and brown lightly.
Serve cold, with or without fruit or cream.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Bread crumbs
- Form the bulk of the pudding and absorb the milk to give it body.
- Egg yolks
- Enrich the base and help it set into a custard-like texture.
- Egg whites
- Whipped to a froth, they form the light meringue topping that puffs and browns.
- Powdered sugar
- Dissolves readily into the whites, sweetening and stabilising the meringue.
- Brown sugar
- Sweetens the base and adds a caramel-like flavour.
- Lemon juice
- Adds acidity that brightens the sweetness and helps stabilise the whites.
The step that matters
Beat the egg whites to a froth. Whites must be whipped until frothy and then combined gently so they hold air. Under-beaten whites stay runny and sink into the base, while over-mixing can deflate them and make the topping weep.
