Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the lemon

  1. Soak the lemon juice and peel together, rubbing the peel with lumps of sugar.

Make the pudding

  1. In a bowl, combine the pounded sugar and grated bread crumbs.

  2. Beat the eggs and add them to the mixture, leaving out 2 egg whites.

  3. Melt the butter and mix it into the lemon mixture.

  4. Edge and trim a dish with puff pastry, then pour in the lemon mixture.

Bake

  1. Bake in a 400°F (200°C) oven for 45 minutes.
