Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sally lunn cake
Forms the soft, absorbent base that soaks up the milk and holds the custard.
Milk
Soaks into the cake, moistening it and softening its crumb.
Egg
Sets during boiling, binding the soaked cake into a tender, custard-like pudding.
White wine
Adds acidity and aroma that brighten the sweet, rich pudding.
Sugar
Adds sweetness and helps balance the spice and wine.

The step that matters

Stirring in the mixture carefully. The cake is soft and held together only by its upper crust and the removed piece. Rough stirring can break the crumb apart, so the egg mixture should be folded in gently to keep the pudding intact and evenly moist.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, white wine, sugar, butter, bread):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Tarragonfits less well

Fit is the average pairing score against milk, egg, white wine, sugar, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
