Why it works: Gooseberry and flour work together. They rank in the top 16% of all ingredient pairs, and cooks put them together in 30 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Open Jam Tart

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Cover an enamel plate with short crust pastry.

  3. Place a few crusts of bread in the center of the pastry.

Bake and assemble

  1. Bake the pastry and bread until golden.

  2. Remove the bread and spread jam over the center of the tart.

  3. Cut thin strips of twisted pastry and arrange them in a pattern over the jam.

Serve

  1. Serve the tart cold.

What each ingredient does

Short crust pastry
Forms the sturdy base and shell that holds the jam while baking.
Jam
Provides sweetness and fruity flavour, and sets into a glossy filling as it cools.
Bread crusts
Are baked in the centre of the pastry to hold its shape while the base cooks.
