Rich Bread and Butter Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Simmer the milk with lemon rind and bruised almonds (or cinnamon) for 10 to 20 minutes.

  2. Strain the milk and mix it with cream and sugar while still hot.

  3. Stir in the beaten eggs and add a few grains of salt and brandy.

Assemble and soak

  1. In a thickly buttered dish, layer the bread and butter with currants and candied peel.

  2. Pour the egg and milk mixture over the layers gradually, allowing the bread to absorb it before adding more.

  3. Let the pudding soak for 2 hours.

Bake

  1. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

What each ingredient does

Eggs
Bind the custard and set it into a soft, sliceable pudding when baked.
Milk
Forms the liquid base that the bread soaks up and the eggs set in.
Cream
Adds richness and a smoother, softer texture to the custard.
Bread and butter
Provides the structure of the pudding, soaking up custard while holding its layers.
Sugar
Sweetens the custard and helps it brown slightly on top during baking.

The step that matters

Pour the custard gradually and let the bread absorb it. Adding the custard in stages lets the bread soak it up evenly. Pouring it all at once can leave dry bread on top and a soggy, pooled base.

Swap the lemon
