Bich Bbead and Butter Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Simmer the milk with lemon rind and bruised almonds (or cinnamon) for 10 to 20 minutes, then strain.

  2. Mix the strained milk with cream and sugar while still hot.

  3. Stir in the beaten eggs and a few grains of salt, then add the brandy.

Assemble and soak

  1. In a buttered dish, layer the bread and butter with currants and candied peel.

  2. Pour the egg and milk mixture over the layers gradually, allowing the bread to absorb it before adding more.

  3. Let the pudding soak for 2 hours.

Bake

  1. Bake in a 350°F (175°C) oven for 30 minutes.

What each ingredient does

Eggs
Bind the custard and set during baking, giving the pudding its structure.
Milk
Forms the liquid custard that soaks into the bread and sets as it bakes.
Cream
Adds richness and a smoother, silkier texture to the custard.
Bread and butter
Soaks up the custard to form the body of the pudding, with butter adding richness.
Sugar
Sweetens the custard and contributes to browning on the surface.
Currants
Add pockets of sweet, chewy fruit throughout the pudding.

The step that matters

Pour the custard gradually and allow it to soak in. Adding the egg mixture slowly lets the bread absorb it evenly. Pouring too fast leaves dry bread on top and pooled liquid below, so the pudding bakes unevenly.

Swap the lemon

Fit is the average pairing score against milk, almond, cream, sugar, egg, brandy, bread. Candidates are from the same food group and used in at least 100 recipes.
