Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooked in milk to form a thick paste that gives the pudding its body.
Apples
Provide moisture, flavour and bulk to the pudding base.
Egg whites
Whipped and folded in to lighten the mixture and help it set.
Sugar
Adds sweetness to the apple and rice base.

The step that matters

Folding in the egg whites. Folding gently keeps the air beaten into the egg whites, so the pudding stays light instead of collapsing or turning dense. Cook until set so the whites firm up fully.
