Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, beat the eggs and powdered sugar together until well combined.

  3. Gradually add the flour and ground rice, one spoonful at a time, while continuing to beat for about 30 minutes.

  4. Add the grated lemon peel and lemon juice, mixing well.

Bake

  1. Pour the batter into a well-buttered cake tin.

  2. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift as they are beaten with the sugar, setting as the cake bakes.
All-purpose flour
Forms the main structure of the cake once its proteins set in the oven.
Ground rice
Adds a tender, slightly crumbly texture to the crumb.
Powdered sugar
Sweetens the batter and helps trap air when beaten with the eggs.

The step that matters

Beating in the flour and ground rice. Adding the dry ingredients slowly while beating keeps the batter smooth and airy. Adding them all at once can deflate the foam from the eggs and make the cake dense.
