Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the batter

  1. In a bowl, mix sugar, butter, lard, cinnamon, cloves, and allspice until well combined.

  2. Add eggs, syrup or sorghum, sour milk, and baking soda; mix until smooth.

  3. Fold in the raisins and citron, ensuring they are well coated with flour.

Bake

  1. Pour the batter into a greased cake pan and bake for about 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Baking soda
Reacts with the sour milk to produce gas that lifts the batter.
Butter
Adds fat for tenderness and rich flavor in the crumb.
Lard
Adds fat that keeps the crumb tender and moist.
Sugar
Sweetens the cake and helps brown the crust while baking.
Sour milk
Its acidity activates the baking soda and adds moisture.

The step that matters

Coating the raisins and citron with flour. Flour-coated fruit is less likely to sink to the bottom of the batter, so it stays distributed through the cake as it bakes and sets.

Swap the allspice

How well each one fits the dish's main ingredients (sugar, butter, cinnamon, clove, egg, syrup, milk):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicethe original
  4. Gingerfits about as well

Fit is the average pairing score against sugar, butter, cinnamon, clove, egg, syrup, milk. Candidates are from the same food group and used in at least 100 recipes.
