Rice Blanc-mange

Ingredients

Directions

Make the base

  1. Mix the ground rice with ½ cup of milk to form a smooth batter.

  2. In a saucepan, combine the remaining milk, sugar, butter, and your choice of flavoring.

  3. Bring the mixture to a boil, then quickly stir in the rice batter.

  4. Boil for about 10 minutes, stirring constantly, until it pulls away from the sides of the saucepan.

Set and serve

  1. Grease a mold with pure salad oil and pour in the rice mixture.

  2. Let it set completely, preferably overnight, for better firmness.

  3. To serve, turn out the blanc-mange and garnish with jam or a fruit compote.

What each ingredient does

Ground rice
Its starch thickens the milk as it cooks, giving the blancmange its body and set.
Milk
Forms the liquid base that the rice starch thickens into a smooth, creamy custard.
Loaf sugar
Adds sweetness and helps give the finished set a softer, more delicate texture.
Butter
Adds fat, which contributes richness and a smoother mouthfeel to the set dessert.

The step that matters

Stirring while the rice cooks. Ground rice settles and scorches on the bottom of the pan if left alone, and its starch must be fully cooked and constantly moved to thicken evenly without lumps or a burnt taste.
