Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the ground rice thickens into a cream.
Ground rice
Thickens the milk as its starch cooks, giving the cream body that sets when cold.
Caster sugar
Sweetens the cream and balances the caramel.
Loaf sugar
Cooks to a dark caramel that coats the mold and adds bittersweet flavour.
Lemon rind
Adds aromatic citrus oils to the milk as it heats.

The step that matters

Boil the caramel until dark golden brown. Sugar darkens within seconds near the end of cooking, so it can pass from rich amber to bitter and burnt quickly. Stop it at a dark golden brown for a sweet, not acrid, coating.
