What each ingredient does

Peas
Provide the main body, sweet flavour and green colour of the soup.
White stock
Supplies the savoury liquid base that carries the puréed vegetables.
Butter
Adds richness and carries flavour, and forms the base for the thickening.
Flour
Thickens the soup as its starch swells with the butter and heated liquid.

The step that matters

Stirring the flour into the butter before adding the soup. Flour must be cooked briefly in the melted butter, then stirred while the liquid comes to the boil. This lets the starch swell evenly and gives a smooth, lump-free soup rather than a floury or lumpy one.

Swap the mint

How well each one fits the dish's main ingredients (peas, spinach, butter, flour, pepper):
